Vegan French Toast with Berry Compote
Ingredients
- 1 loaf Vegan white bread
- 1 cup of just Egg
- 1/2 cup plant milk
- 2 tbsp sugar
- 2 tsp ground cinnamon
- Dash of nutmeg
- 1 tbsp of coconut oil
- 1 tsp vanilla extract
- vegan butter to coat the pan
Berry compote
- 2 cups of frozen mixed berries
- 1/2 cup water
- 1 tbsp lemon juice
- 2 tbsp sugar
Preparation
Bring the berries to a boil and simmer for about 20 minutes, stirring occasionally to prevent sugar from sticking to the bottom of the pan. The compote should coat the spoon and become thick.
For the French toast, combine and whisk together all ingredients except the bread.
Heat a sauté pan over medium heat. Toast the bread slices before dipping them in the batter to achieve a nicer crisp.
Coat the bread on both sides with the batter and cook in the pan for about 2 minutes or until the corners start to brown. Flip and repeat the process.
Continue cooking until you have a stack of French toast.
Cool the compote and serve it on top of the French toast. Optionally, add powdered sugar if desired.
