Extra Crunchy Sesame Peanut Noodle Salad

Ingredients

  • 250g medium egg noodles
  • 150g mangetout, finely sliced
  • 3 spring onions, finely sliced
  • 1 medium carrot, ribboned
  • 1/2 cucumber, seeds removed and finely sliced
  • 1 bell pepper finely sliced
  • handful salted peanuts, rough chopped
  • 1 tbsp sesame seeds
  • 1 tbsp black sesame seeds
  • handful chopped fresh coriander
  • 1/2 finely sliced red chilli
  • 1/2 a fresh lime
  • for the dressing:
  • 2 cloves garlic, rough chopped
  • 1 inch ginger root, rough chopped
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp lime juice
  • 2 tbsp demerara sugar
  • 2 tbsp peanut butter
  • 1 tbsp tahini
  • 1/2 red chilli rough chopped
  • handful fresh coriander

Preparation

  1. Cook the noodles first, add the noodles to boiling salty water and bring up to a simmer and boil for 90 seconds - drain and set aside to cool

  2. Put the ginger, garlic, coriander, soy sauce, vinegar, lime juice, sugar and sesame oil in a blender and blend until smooth

  3. Add the peanut butter and tahini and blitz to combine

  4. When the noodles are cool add the dressing and combine

  5. Add the sliced veg, peanuts, sesame seeds and chopped coriander and mix well

  6. Finish with some more chopped coriander and a generous squeeze of lime and fine slices of fresh red chilli
