Beef Chow Mein Noodles
Ingredients
- sumon noodles (these noodles are finer and whiter in appearance, if you can't get hold of these use egg noodles)
- oil (be generous)
- 3 tsp sesame seeds
- 2 beef steaks, sliced
- 1 heaped tsp crushed ginger
- 1 heaped tsp crushed garlic
- 2 small onions cut into chunks
- 3 green chillies finely minced (or a chilli of your choice)
- soy sauce (preferably dark as this gives a good colour but light will suffice)
- fish sauce (I use Squid brand)
- 2 - 3 cups of frozen stir fry vegetables
- coriander/spring onions to garnish
Preparation
Make sure your ingredients are prepped and the beef is sliced before you begin
Start by heating a generous amount of oil in your wok
Add 3 tsp of sesame seeds when the oil is hot and allow to brown over a high flame
Add 1 heaped tsp each of crushed ginger and garlic and fry till light brown
Add the sliced beef strips. Cook the beef strips till the meat is almost brown all over, make sure the flame is on HIGH throughout cooking
Once the beef has released some of the water and appears cooked, add the chopped onions and green chillies
Add a generous amount of soy sauce (I didn't measure but I'd say about 4 tbsp)
Add a splash of fish sauce (this stuff is strong so I didn't add as much, maybe 2 tbsp)
Lastly add 2 - 3 cups of frozen vegetables. Cook everything over a high heat till the rawness of the onions has gone and the vegetables appear cooked. There will be a lot of fluid, allow some of this, not all, to evaporate
The noodles should be added at the very end, tossed into all the ingredients + cooked for a few minutes. Taste, adjust seasoning if needed
Garnish with sliced spring onions and coriander
