Bolognese with Hidden Vegetables
Ingredients
- 500g pork mince
- 2 tbsp olive oil
- 2 cloves garlic, mashed
- 1 onion, finely diced
- 1 large carrot, peeled and finely diced
- 2 sticks celery, finely diced
- 1 large courgette, finely diced
- 150g mushrooms, finely diced
- 2 tbsp mixed herbs
- 150ml white wine
- 150ml whole milk
- 500ml tomato passata
- 400g dried spaghetti
- Parmesan to serve
Preparation
Put 1 tablespoon of oil into a large frying pan on a medium heat and cook the mince until it's browned. Set aside.
Place the remaining oil in the pan and fry the garlic and onion for a couple of minutes. Add the other vegetables and herbs and fry for 5 minutes. Tip in the wine and bring to a simmer, then add the milk, passata and mince back into the pan. Simmer for 10 minutes.
In the meantime, cook your pasta as per the packet instructions. Once cooked, drain and add to the pan to stir in with the bolognese. Season and serve with grated parmesan.
