Chickpea Pasta with Grilled Vegetable Sauce
Ingredients
- Chickpea pasta
- 1 red bell pepper
- Half a zucchini
- Half a cup of tomato sauce
- 1/4 cup of hemp seeds
- 1 key lime, juiced
- Spring water (amount depending on desired thickness)
Preparation
Grill the bell pepper and zucchini.
Add them to a blender together with the tomato sauce, hemp seeds, key lime juice, and spring water, then blend until smooth.
The sauce is usually still hot from the roasted vegetables, so you don’t have to heat it up.
Pour the sauce over the chickpea pasta.
Garnish with herbs like parsley and fresh basil leaves.
Note: The sauce has a hearty, slightly sweet taste and pairs well with chickpea pasta.
