Creamy Cajun Pumpkin Tagliatelle
Ingredients
- pumpkin
- Cajun spice mix
- garlic powder
- basil
- nooch
- stock
- elmlea vegan cream
- salt and pepper
- tagliatelle
- spinach
- sundried tomatoes
- roasted red pepper
Preparation
Roast pumpkin for about 40 minutes.
Combine the roasted pumpkin with Cajun spice mix, garlic powder, basil, nooch, stock, elmlea vegan cream, salt, and pepper.
Heat the sauce through with the tagliatelle.
Add spinach, sundried tomatoes, and roasted red pepper.
