Creamy Sun-Dried Tomato and Roasted Pepper Pasta
Ingredients
- 1 cup sun-dried tomatoes (marinated, drained)
- 1/4 cup kalamata olives
- 1/2 cup roasted red peppers (drained)
- 3/4 cup to 1 cup oat milk (can substitute another plant-based milk)
- 1/4 tsp garlic powder
- squeeze of lemon juice
- dash of salt and pepper to taste
- 2 tbsp olive oil (or substitute more milk)
- penne pasta
- zucchini
- asparagus
Preparation
Blend the sun-dried tomatoes, kalamata olives, roasted red peppers, oat milk, garlic powder, lemon juice, salt, pepper, and olive oil in a food processor, scraping down sides as needed.
Cook penne pasta according to package instructions.
Sauté or steam zucchini and asparagus until tender.
Toss the cooked pasta and vegetables with the sauce and serve.
