Creamy Sun-Dried Tomato and Roasted Pepper Sauce

Ingredients

  • 1 cup sun-dried tomatoes (marinated, drained)
  • 1/4 cup kalamata olives
  • 1/2 cup roasted red peppers (drained)
  • 3/4 cup to 1 cup oat milk (can sub another plant based milk)
  • 1/4 tsp garlic powder
  • Squeeze of lemon juice
  • Dash of salt and pepper to taste
  • 2 tbsp olive oil (or sub more milk)

Preparation

  1. Blend all the ingredients in a food processor, scraping down the sides as needed

Tips

  1. Substitute oat milk with other plant-based milks if desired

  2. Use more milk in place of olive oil for a different consistency

  3. Serve the sauce with penne pasta, zucchini, and asparagus for a complete meal
