Creamy Sun-Dried Tomato and Roasted Pepper Sauce
Ingredients
- 1 cup sun-dried tomatoes (marinated, drained)
- 1/4 cup kalamata olives
- 1/2 cup roasted red peppers (drained)
- 3/4 cup to 1 cup oat milk (can sub another plant based milk)
- 1/4 tsp garlic powder
- Squeeze of lemon juice
- Dash of salt and pepper to taste
- 2 tbsp olive oil (or sub more milk)
Preparation
Blend all the ingredients in a food processor, scraping down the sides as needed
Tips
Substitute oat milk with other plant-based milks if desired
Use more milk in place of olive oil for a different consistency
Serve the sauce with penne pasta, zucchini, and asparagus for a complete meal
