Easiest Lentil Bolognese Pasta Dish

Ingredients

  • 1 tsp olive oil
  • 1 medium onion, finely chopped
  • 1 25 oz jar marinara/pasta sauce
  • 3/4 cup red lentils
  • 1/2 cup water
  • Optional: 4 oz chopped mushrooms
  • Optional: 1 cup shredded carrot

Preparation

  1. Heat olive oil over medium heat in a large saucepan.

  2. Sauté onion until fragrant and translucent, about 2-3 minutes.

  3. Add in mushrooms and shredded carrots, if using, and cook for another 2 minutes.

  4. Add in the rest of the ingredients and bring to a boil, then reduce heat and cover, simmering lentils until they are tender (about 18-20 minutes).

  5. Serve warm atop pasta.
