Rich Creamy Pumpkin Pasta Sauce

Ingredients

  • 100 grams pumpkin puree
  • 4 tablespoons whipped cream cheese
  • 2-3 cups chicken broth
  • 1 can green chilis
  • 2 tablespoons tomato paste
  • 3 red bell peppers
  • 2 sweet yellow onions
  • 1-2 packets of stevia
  • 1 frozen garlic cube or 1 tablespoon minced garlic
  • 1 squeeze of lemon (optional)
  • White cheddar or garlic parm kernel seasoning to taste
  • Pink salt to taste
  • Pepper to taste
  • Smoked paprika to taste
  • Red pepper flakes to taste
  • Cumin to taste (optional)

Preparation

  1. Chop the sweet onions and bell peppers.

  2. For air fryer method: Spray with coconut oil spray and air fry at 360 degrees for about 20 minutes, shaking the basket halfway.

  3. For oven method: Preheat oven to 425 degrees, remove stems from bell peppers, chop the onions, spray with avocado or coconut oil spray, add pink salt, and roast for 30-40 minutes until soft.

  4. Allow the roasted vegetables to cool slightly.

  5. Add all the sauce ingredients to a blender.

  6. Blend on high until smooth.

  7. Taste and adjust seasoning and thickness with more spices or chicken broth as needed.
