Rich Creamy Pumpkin Pasta Sauce
Ingredients
- 100 grams pumpkin puree
- 4 tablespoons whipped cream cheese
- 2-3 cups chicken broth
- 1 can green chilis
- 2 tablespoons tomato paste
- 3 red bell peppers
- 2 sweet yellow onions
- 1-2 packets of stevia
- 1 frozen garlic cube or 1 tablespoon minced garlic
- 1 squeeze of lemon (optional)
- White cheddar or garlic parm kernel seasoning to taste
- Pink salt to taste
- Pepper to taste
- Smoked paprika to taste
- Red pepper flakes to taste
- Cumin to taste (optional)
Preparation
Chop the sweet onions and bell peppers.
For air fryer method: Spray with coconut oil spray and air fry at 360 degrees for about 20 minutes, shaking the basket halfway.
For oven method: Preheat oven to 425 degrees, remove stems from bell peppers, chop the onions, spray with avocado or coconut oil spray, add pink salt, and roast for 30-40 minutes until soft.
Allow the roasted vegetables to cool slightly.
Add all the sauce ingredients to a blender.
Blend on high until smooth.
Taste and adjust seasoning and thickness with more spices or chicken broth as needed.
