Sketti and Meatballs

Ingredients

  • olive oil
  • red onion
  • carrot
  • red bell pepper
  • minced garlic
  • mushrooms

Preparation

  1. Heat a glug of olive oil and fry a diced red onion for about 5 minutes in a large saucepan, until it starts to soften

  2. Add a large diced carrot, red bell pepper, and three cloves of minced garlic, fry for a few more minutes until the veggies start to soften too

  3. Add half a punnet of diced mushrooms, fry off until the texture you like (I find with mushrooms its a bit personal!)

  4. Season with salt and pepper and a generous tbsp mixed herbs and stir through

  5. Add a tin of tomatoes and bring to the boil, then lower to a simmer to cook for 15 minutes. Taste and season as needed

  6. Meanwhile cook your meatballs - mine were oven baked so at this point I put them in there to cook for 18 mins and stir through the sauce at the end. Depending on the brand you have, yours might need cooking in with the sauce. In the last ten mins, boil your wholegrain pasta in salted water

  7. Mix all together and serve with garlic bread
