Spaghetti with a Cashew Basil Sauce and Oven Roasted Tomatoes

Ingredients

  • 1 cup of raw cashews
  • 1 cup of fresh basil
  • 1/4 of a small clove of garlic
  • juice of half a lemon
  • salt

Preparation

  1. Soak the cashews over night in water and drain them. Mix in a blender with half a cup if water until smooth. Add the basil, garlic and lemon juice and mix again. Salt to taste

  2. You can use this sauce like I did, as a pasta sauce and add roasted tomatoes or other roasted vegetables ? or use it as a dip. If you like the sauce to have a cheesy taste, add nutritional yeast
