Spaghetti with Cashew Basil Sauce and Oven Roasted Tomatoes

Ingredients

  • 1 cup raw cashews
  • 1 cup fresh basil
  • 1/4 small clove garlic
  • Juice of half a lemon
  • Salt

Preparation

  1. Soak the cashews overnight in water and drain them.

  2. Mix in a blender with half a cup of water until smooth.

  3. Add the basil, garlic, and lemon juice and mix again.

  4. Salt to taste.

  5. Use as a pasta sauce by adding roasted tomatoes or other roasted vegetables, or as a dip.

  6. Optionally, add nutritional yeast for a cheesy taste.
