Spaghetti with Cashew Basil Sauce and Oven Roasted Tomatoes
Ingredients
- 1 cup raw cashews
- 1 cup fresh basil
- 1/4 small clove garlic
- Juice of half a lemon
- Salt
Preparation
Soak the cashews overnight in water and drain them.
Mix in a blender with half a cup of water until smooth.
Add the basil, garlic, and lemon juice and mix again.
Salt to taste.
Use as a pasta sauce by adding roasted tomatoes or other roasted vegetables, or as a dip.
Optionally, add nutritional yeast for a cheesy taste.
