Spaghetti with a Cashew Basil Sauce and Oven Roasted Tomatoes
Ingredients
- 1 cup of raw cashews
- 1 cup of fresh basil
- 1/4 of a small clove of garlic
- juice of half a lemon
- salt
Preparation
Soak the cashews over night in water and drain them. Mix in a blender with half a cup if water until smooth. Add the basil, garlic and lemon juice and mix again. Salt to taste
You can use this sauce like I did, as a pasta sauce and add roasted tomatoes or other roasted vegetables ? or use it as a dip. If you like the sauce to have a cheesy taste, add nutritional yeast
