Sun-Dried Tomato and Basil Pasta

Ingredients

  • 1/2 onion
  • 3-5 cloves garlic
  • 3 oz sun-dried tomatoes
  • 1 pack firm tofu
  • 1/4 cup nutritional yeast
  • 2 1/2 cups pasta water or veggie broth
  • 1/2 lemon
  • 1 tsp salt
  • Lots of pepper
  • 12 oz bow tie pasta
  • Fresh basil

Preparation

  1. Cook your pasta as instructed on the packaging and reserve 3 cups of pasta water before straining.

  2. While your pasta is cooking, sauté your onion and garlic until translucent.

  3. Transfer the sautéed onion, garlic, tofu, sun-dried tomatoes, nutritional yeast, lemon juice, salt, pepper, and pasta water or veggie broth to a high speed blender. Blend until smooth, adding more veggie broth if needed to achieve a texture similar to alfredo.

  4. Pour the sauce over your pasta, taste and adjust the flavor to your liking, adding more salt or pepper if needed.

Tips

  1. This sauce makes a little extra and can be stored in the fridge for up to 3-5 days.
