Sun-Dried Tomato and Basil Pasta
Ingredients
- 1/2 onion
- 3-5 cloves garlic
- 3 oz sun-dried tomatoes
- 1 pack firm tofu
- 1/4 cup nutritional yeast
- 2 1/2 cups pasta water or veggie broth
- 1/2 lemon
- 1 tsp salt
- Lots of pepper
- 12 oz bow tie pasta
- Fresh basil
Preparation
Cook your pasta as instructed on the packaging and reserve 3 cups of pasta water before straining.
While your pasta is cooking, sauté your onion and garlic until translucent.
Transfer the sautéed onion, garlic, tofu, sun-dried tomatoes, nutritional yeast, lemon juice, salt, pepper, and pasta water or veggie broth to a high speed blender. Blend until smooth, adding more veggie broth if needed to achieve a texture similar to alfredo.
Pour the sauce over your pasta, taste and adjust the flavor to your liking, adding more salt or pepper if needed.
Tips
This sauce makes a little extra and can be stored in the fridge for up to 3-5 days.
