Vegan Chicken Alfredo

Ingredients

  • 1/4 c plant butter
  • 2 tblsp all purpose flour
  • about 2 cups water
  • 1 tsp better than bouillon vegetable base
  • 1 cup fresh oyster mushrooms, cleaned & cut to desired size
  • 1 tblsp dried parsley
  • 1/2 tsp salt (optional)

Preparation

  1. Melt butter in pan

  2. Add flour and stir with whisk

  3. Add water little by little, whisking to incorporate after each addition. Stop when it is at the thickness you want

  4. Add vegetable base and mix well

  5. Add mushrooms

  6. When mushrooms are cooked, add parsley and taste

  7. If needed, add salt. Pour over cooked pasta. Garnish with more parsley if desired
