Carrot oat breakfast

Ingredients

  • 150g apple sauce
  • 40g nut butter of choice
  • 100 ml almond milk ( or other)
  • 70g sugar/coconut sugar/xylit etc
  • 100g oat flour
  • 30g coconut flour ( or more oat flour)
  • 2 tsp baking powder
  • 1 pinch of salt
  • 130g grated carrots (1-2 small-medium carrots)• fresh lemon peel (from 1/2 organic lemon)

Preparation

  1. Mix all ingredients well ( add carrots last)

  2. Bake in a square form for 30-60 min (180°C/350°F upper- and lower heat) until it's golden brown.

  3. For the frosting mix some vegan cream cheese (~100g) with 1-2 tbsp marple syrup or other syrup
