Fluffy Apple Biscoff Cake

Ingredients

  • 200 ml plant milk
  • 1tsp apple cider vinegar
  • 1 pinch of salt
  • 100 g soy yogurt
  • 150 g sugar
  • 80 g vegan butter/margarine
  • 300 g flour (wheat/spelt or a gf flour mix)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1kg apples
  • 2/3 tsp cinnamon
  • 3 tbsp biscoff cream

Preparation

  1. Preheat the oven to 180°C /350°F upper and lower heat

  2. Cut the Apples into slices

  3. Mix all the ingredients for the batter and spread it in an oiled baking form

  4. Spread small blubs of biscoff cream over the cake batter and put the apple pieces on top

  5. Sprinkle the cinnamon over it and bake everything for ~40 min until its golden brown

  6. Optional: top with 2 more tbsp melted biscoff cream

  7. Let it cool down a little & enjoy
