Vegan No Bake Tarts

Ingredients

  • 1 1/2 cup oat flour⠀
  • 10 dates pitted (soak in hot water)⠀
  • shredded coconut ⠀
  • 5 tbsp coconut oil⠀
  • 1 tsp vanilla extract⠀
  • 1 cup chopped mango⠀
  • lemon zest⠀
  • lemon juice⠀
  • 1 cup coconut milk⠀
  • 1 tsp agar agar powder @livingjin.official⠀
  • blend oats to make the flour⠀
  • soak dates in hot water for 5mins ⠀
  • filling:⠀
  • puree the mango in the blender⠀
  • remove from heat and add the mango puree to combine together ⠀
  • sieve the mixture to get a smooth consistency. ⠀

Preparation

  1. Blend oats to make the flour⠀

  2. Soak dates in hot water for 5mins ⠀

  3. In a good processor, combine the oat flour,dates,vanilla extract,shredded coconut and coconut oil to make a sand like mixture

  4. Firmly press the mixture into tart tins and refrigerate while you make the filling

  5. Filling:⠀

  6. Puree the mango in the blender⠀

  7. In a saucepan, heat coconut milk, add lemon juice,zest and stir together for 30secs

  8. Then add agar agar powder and dissolve

  9. Agar agar will help the filling set and be a little hard

  10. Remove from heat and add the mango puree to combine together ⠀

  11. Sieve the mixture to get a smooth consistency

  12. Pour this mixture into the tart tins with the crust

  13. Refrigerate for at least 3 hours or overnight for better results

  14. I drizzled melted chocolate because why not!⠀
