Chicken Sausage Sweet Potato Pizza

Ingredients

  • 1 cup fully cooked sweet potato (peeled and mashed)
  • 1 egg
  • 2/3 cup gluten-free oat flour
  • 1 tbsp coconut flour
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp Apple cider vinegar
  • Toppings: Chicken sausage, kale, onions, organic marinara, cheese

Preparation

  1. Preheat the oven to 400°F.

  2. In a bowl, whisk the egg.

  3. Prepare the sweet potato by baking it at 425°F for 50 minutes or microwaving it until soft. Peel and mash it.

  4. Add the mashed sweet potato and all other crust ingredients to the bowl with the egg. Mix together well to form a dough.

  5. Press the dough into a ball in the bowl.

  6. Line a pizza pan or regular pan with parchment paper.

  7. Place the dough on the pan and flatten it out to about 1/2 inch thick, forming 2 mini pizzas or 1 regular pizza. It doesn't have to be perfectly shaped.

  8. Bake the crust at 400°F for 30 minutes.

  9. Remove the crust from the oven, flip it, and bake for an additional 10 minutes.

  10. Remove the crust again and add the toppings. Use sautéed chicken sausage, kale, and onions. Spread organic marinara sauce and cheese over the toppings.

  11. Bake the pizza for 5-10 more minutes, until the cheese is melted and bubbly.
