Barley Porridge
Ingredients
- barley porridge (3-4 portions)
- 1/3 c uncooked barley
- 1/2 c milk of your choice
- 1 tsp maple syrup/honey
- 1/2 tsp cinnamon
- 1/3 tsp salt
- 1 c water (+/-)
Preparation
Soak barley overnight with double as much of water
Next morning drain the water off, add the barley to a pot with 1c water, milk & salt
With a hand mixer blend the mixture for 30sec or until most of the barley has been cut in smaller pieces
Heat to a boil stirring constantly to avoid burning
When boling turn down to low heat and let boil for another 25-30 minutes, stirring every 5 minute
Lastly, add cinnamon & sweetener
Eat it hot or store in fridge for a ‘cold’ version (just as good, maybe even better in my opinion
