Bulgar Wheat and Chickpea Bowl

Ingredients

  • bulgar wheat
  • the chickpeas
  • extra virgin olive oil
  • 2 garlic cloves crushed
  • 1 onion diced and a tsp of cumin
  • a can of chopped tomatoes
  • a handful of spinach
  • lemon juice
  • season with salt and pepper to taste
  • some fresh chopped coriander & cherry tomatoes

Preparation

  1. Boil the bulgar wheat in boiling water

  2. Drain and rinse the chickpeas then add them to a pan and cook in 1tbsp of extra virgin olive oil for a few minutes on a medium heat

  3. Add 2 garlic cloves crushed, 1 onion diced and a tsp of cumin, cook until the onion is slightly brown

  4. Add a can of chopped tomatoes until warmed through

  5. Add a handful of spinach and cook until wilted

  6. Once the bulgar wheat is soft drain any excess water and then add everything from the pan into the saucepan with the bulgar wheat

  7. Mix altogether and serve

  8. Squeeze lemon juice, season with salt and pepper to taste and add some fresh chopped coriander & cherry tomatoes -
