Creamy Barley Porridge with Maple Syrup
Ingredients
- 1/3 c uncooked barley
- 1/2 c milk of your choice
- 1 tsp maple syrup/honey
- 1/2 tsp cinnamon
- 1/3 tsp salt
- 1 c water (+/-)
Preparation
Soak barley overnight with double the amount of water.
Next morning, drain the water off.
Add the barley to a pot with 1 cup water, milk, and salt.
Blend the mixture with a hand mixer for 30 seconds or until most of the barley is in smaller pieces.
Heat to a boil, stirring constantly to avoid burning.
Reduce heat to low and simmer for 25-30 minutes, stirring every 5 minutes.
Add cinnamon and sweetener.
Eat hot or store in the fridge for a cold version.
