Creamy Barley Porridge with Maple Syrup

Ingredients

  • 1/3 c uncooked barley
  • 1/2 c milk of your choice
  • 1 tsp maple syrup/honey
  • 1/2 tsp cinnamon
  • 1/3 tsp salt
  • 1 c water (+/-)

Preparation

  1. Soak barley overnight with double the amount of water.

  2. Next morning, drain the water off.

  3. Add the barley to a pot with 1 cup water, milk, and salt.

  4. Blend the mixture with a hand mixer for 30 seconds or until most of the barley is in smaller pieces.

  5. Heat to a boil, stirring constantly to avoid burning.

  6. Reduce heat to low and simmer for 25-30 minutes, stirring every 5 minutes.

  7. Add cinnamon and sweetener.

  8. Eat hot or store in the fridge for a cold version.
