Vegan Peach Blueberry Crumble

Ingredients

Filling

  • 2 cups peaches
  • 4 cups blueberries
  • 1/4 cup date syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Topping

  • 3/4 cup date syrup
  • Original pili nuts
  • 3 tbs flax seeds
  • 1/2 cup gluten free coconut flour
  • 3/4 cup gluten free rolled oats
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil, melted
  • 1/4 cup vegan butter, melted

Preparation

  1. In a large bowl, mix together all ingredients for the crumble.

  2. In a separate bowl mix ingredients for the topping.

  3. Pour crumble ingredients into a baking dish.

  4. Sprinkle topping evenly over the top of crumble.

  5. Bake at 200 degrees for 50-60 minutes or until golden.

  6. Allow to rest for 10 minutes.

  7. Serve with vegan ice cream of your choice.
