Vegan Peach Blueberry Crumble
Ingredients
Filling
- 2 cups peaches
- 4 cups blueberries
- 1/4 cup date syrup
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
Topping
- 3/4 cup date syrup
- Original pili nuts
- 3 tbs flax seeds
- 1/2 cup gluten free coconut flour
- 3/4 cup gluten free rolled oats
- 1/4 teaspoon salt
- 2 tablespoons coconut oil, melted
- 1/4 cup vegan butter, melted
Preparation
In a large bowl, mix together all ingredients for the crumble.
In a separate bowl mix ingredients for the topping.
Pour crumble ingredients into a baking dish.
Sprinkle topping evenly over the top of crumble.
Bake at 200 degrees for 50-60 minutes or until golden.
Allow to rest for 10 minutes.
Serve with vegan ice cream of your choice.
