Vegan Zoatmeal Bakes
Ingredients
- 1c @quaker rolled oats
- 1 ripe bananas (mashed)
- 1 small zucchini (grated)
- 2t @bobsredmill bobsredmill ground flaxseed meal
- 2/3c almond milk
- 1tsp vanilla extract
- 3/4tsp baking powder
- 1/2tsp cinnamon
- 1/4tsp sea salt
Preparation
Mash banana in a bowl then add flaxseed meal and a bit of water to thicken while you grate the zucchini
Add your zucchini and stir in the remaining ingredients to create your batter (should be the consistency of a thicker overnight oat recipe)
Add to an baking pan or a ramekin and bake for 35min @ 350°f (*cool down for atleast 10min before cutting in); baking time will depend on size of dish
Add creamy almond butter, strawberries, @traderjoes organic creamy cashew vanilla vegan yogurt, and extra @enjoylifefoods choc chips on top!
