Vegan Zoatmeal Bakes

Ingredients

  • 1c @quaker rolled oats
  • 1 ripe bananas (mashed)
  • 1 small zucchini (grated)
  • 2t @bobsredmill bobsredmill ground flaxseed meal
  • 2/3c almond milk
  • 1tsp vanilla extract
  • 3/4tsp baking powder
  • 1/2tsp cinnamon
  • 1/4tsp sea salt

Preparation

  1. Mash banana in a bowl then add flaxseed meal and a bit of water to thicken while you grate the zucchini

  2. Add your zucchini and stir in the remaining ingredients to create your batter (should be the consistency of a thicker overnight oat recipe)

  3. Add to an baking pan or a ramekin and bake for 35min @ 350°f (*cool down for atleast 10min before cutting in); baking time will depend on size of dish

  4. Add creamy almond butter, strawberries, @traderjoes organic creamy cashew vanilla vegan yogurt, and extra @enjoylifefoods choc chips on top!
