Vegan Zucchini Oatmeal Bakes

Ingredients

  • 1 cup rolled oats
  • 1 ripe banana
  • 1 small zucchini
  • 2 tablespoons ground flaxseed meal
  • 1 scoop vegan banana PB protein powder
  • 2/3 cup almond milk
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt

Preparation

  1. Mash banana in a bowl then add flaxseed meal and a bit of water to thicken while you grate the zucchini

  2. Add your zucchini and stir in the remaining ingredients to create your batter (should be the consistency of a thicker overnight oat recipe).

  3. Add to a baking pan or a ramekin and bake for 35 minutes at 350°F (cool down for at least 10 minutes before cutting in); baking time will depend on size of dish

  4. Add creamy almond butter, strawberries, organic creamy cashew vanilla vegan yogurt, and extra chocolate chips on top! You won’t regret it
