Chocolate Cherry Almond Bread Pudding

Ingredients

  • oil for greasing dish
  • approximately 22 ounce loaf sourdough bread, diced into 1 1/2” pieces
  • 2 cup unsweetened almond milk, room temperature
  • 2 room temperature eggs
  • 1/4 cup unsalted butter, melted and cooled to room temperature
  • 1/2 cup maple syrup, room temperature
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cinnamon
  • 2 cups pitted frozen
  • cherries
  • 2/3 cup dark chocolate chips/chunks

Preparation

  1. Preheat oven to 350 degrees f and grease a 9x13 baking dish

  2. In a large mixing bowl, whisk together almond milk, eggs, butter, maple syrup, almond extract, salt and cinnamon

  3. Spread bread pieces into your baking dish in an even layer

  4. Pour milk mixture over and press to soak into bread

  5. Evenly spread cherries over the top and press gently into bread

  6. Bake for 45 minutes, then immediately sprinkle on chocolate chips

  7. Allow to sit 10 minutes before enjoying!
