Easy Lentil Stew with Rice and Spices

Ingredients

  • 2 diced onions
  • 1 cup yellow lentils
  • 1/2 cup Basmati or brown rice (soaked and drained for 30 minutes)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 2 tsp olive oil

Preparation

  1. Heat the oil in a saucepan and cook the onions until golden brown.

  2. Add the lentils, rice, and spices.

  3. Add 3 to 4 cups of hot water and cook with occasional stirring until the rice is cooked.
