Easy Lentil Stew with Rice and Spices
Ingredients
- 2 diced onions
- 1 cup yellow lentils
- 1/2 cup Basmati or brown rice (soaked and drained for 30 minutes)
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
- 2 tsp olive oil
Preparation
Heat the oil in a saucepan and cook the onions until golden brown.
Add the lentils, rice, and spices.
Add 3 to 4 cups of hot water and cook with occasional stirring until the rice is cooked.
