Sweet Chili Roasted Cauliflower
Ingredients
- 1 head cauliflower
- 1-2 Tbsp grape seed oil
- 1 1/2 Tbsp chili paste
- 3 tsp rice vinegar
- 3 tsp sweetener (such as Beefree Honee)
- 2 tsp soy sauce
- 1 Fresno pepper
- 3/4 - 1 cup water
- 1 Tbsp cornstarch
- 3 Tbsp water (for slurry)
- 2 cups cooked rice (for serving)
- Green onion (for garnish)
Preparation
Cut the cauliflower into florets and toss with grape seed oil, salt, and pepper. Lay them on a baking sheet and roast at 375°F for 25 minutes. Flip and continue roasting for another 20 minutes.
In a small saucepan over medium heat, add the water, chili paste, rice vinegar, soy sauce, sweetener, and chopped pepper. Bring to a soft boil.
Add the cornstarch slurry and mix until the sauce thickens.
In a large bowl, toss the roasted cauliflower with the sweet chili sauce until completely coated, top with green onions, and serve over rice.
