Beet and Greens Salad with Tahini Dressing

Ingredients

  • Mixed greens
  • Steamed beets
  • Red onion
  • Dill weed
  • Pepper

Tahini dressing

  • 2 Tbsp tahini
  • 1/2-1 cup filtered water
  • 2 garlic cloves
  • Sea salt
  • Black pepper
  • 1 Tbsp maple syrup
  • Juice of 1/2 lemon

Preparation

  1. Steam the beets until tender

  2. Prepare the tahini dressing by whisking together all dressing ingredients until smooth

  3. Assemble the salad by combining the mixed greens, steamed beets, red onion, dill weed, and pepper in a bowl. Add the tahini dressing and toss to mix
