Chickpea-Black Olive Salad Toast with Cucumber and Avocado
Ingredients
- 1 can of chickpeas
- Handful of black olives
- 1 tablespoon of flaxseed oil
- 3 tablespoons of plain yogurt
- 2 cloves of garlic, chopped
- 1/2 teaspoon of Mediterranean herbs
- Salt and white pepper
Preparation
Roughly mash the chickpeas using the back of a fork or a potato masher.
Add the black olives, flaxseed oil, yogurt, chopped garlic, Mediterranean herbs, salt, and white pepper to the mashed chickpeas.
Mix all the ingredients together until you achieve a nice thick mixture.
