Chickpea-Black Olive Salad Toast with Cucumber and Avocado

Ingredients

  • 1 can of chickpeas
  • Handful of black olives
  • 1 tablespoon of flaxseed oil
  • 3 tablespoons of plain yogurt
  • 2 cloves of garlic, chopped
  • 1/2 teaspoon of Mediterranean herbs
  • Salt and white pepper

Preparation

  1. Roughly mash the chickpeas using the back of a fork or a potato masher.

  2. Add the black olives, flaxseed oil, yogurt, chopped garlic, Mediterranean herbs, salt, and white pepper to the mashed chickpeas.

  3. Mix all the ingredients together until you achieve a nice thick mixture.
