Greek(ish) Pasta Salad W/ Zucchini

Ingredients

  • 7.5oz elbow pasta (i used @tolerantfoods brand) ⁣
  • 1 tablespoon extra virgin olive oil⁣
  • 2 zucchinis, quartered lengthwise and sliced⁣
  • 1/2 teaspoon dried oregano⁣
  • 1/4 teaspoon garlic powder⁣
  • salt and pepper ⁣
  • 1 large handful pitted kalamata olives, halved (about 1/4 cup chopped)⁣
  • 2 jarred roasted red peppers, chopped (about 1/3 cup chopped) ⁣
  • 1 (15oz) can white beans, drained and rinsed⁣
  • 1/4 cup greek dressing ⁣
  • 1/4 cup crumbled feta cheese or more⁣
  • to garnish: red pepper flakes ⁣

Preparation

  1. Start boiling your pasta water

  2. Once boiling, add the pasta and cook for 5 minutes

  3. Once you start boiling the water for the pasta, heat the oil in a medium skillet over medium-high heat

  4. Add the zucchini, season with oregano, garlic powder, salt and pepper and cook until seared and fork tender, about 5 minutes

  5. While zucchini cooks, add the olives, peppers, and white beans to a large salad bowl

  6. Once pasta and zucchini are done, add them to the bowl along with the feta cheese and toss well to combine

  7. Serve garnish with red pepper flakes
