Greek(ish) Pasta Salad W/ Zucchini
Ingredients
- 7.5oz elbow pasta (i used @tolerantfoods brand)
- 1 tablespoon extra virgin olive oil
- 2 zucchinis, quartered lengthwise and sliced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- salt and pepper
- 1 large handful pitted kalamata olives, halved (about 1/4 cup chopped)
- 2 jarred roasted red peppers, chopped (about 1/3 cup chopped)
- 1 (15oz) can white beans, drained and rinsed
- 1/4 cup greek dressing
- 1/4 cup crumbled feta cheese or more
- to garnish: red pepper flakes
Preparation
Start boiling your pasta water
Once boiling, add the pasta and cook for 5 minutes
Once you start boiling the water for the pasta, heat the oil in a medium skillet over medium-high heat
Add the zucchini, season with oregano, garlic powder, salt and pepper and cook until seared and fork tender, about 5 minutes
While zucchini cooks, add the olives, peppers, and white beans to a large salad bowl
Once pasta and zucchini are done, add them to the bowl along with the feta cheese and toss well to combine
Serve garnish with red pepper flakes
