Juicy Jerk Chicken with Pineapple Rice

Ingredients

  • 2 chicken breasts
  • 1/4 cup olive oil
  • 1 lime, juiced
  • 2 tbsp tamari (or soy sauce)
  • 1/2 tbsp honey
  • 2 minced garlic cloves
  • 3 tsp allspice
  • 1 tsp onion powder
  • 1/2 tsp nutmeg
  • 1 tsp crushed red pepper
  • 1 cup diced pineapple
  • 1/3 cup diced onion
  • 1 jalapeño pepper
  • 1/3 cup chopped cilantro
  • 1/2 avocado, diced
  • Optional: cherry tomatoes
  • Chosen Foods avocado oil
  • Rice or cauli rice
  • Optional: side of spinach or greens

Preparation

  1. Whisk together olive oil, lime juice, tamari, honey, minced garlic cloves, allspice, onion powder, nutmeg, and crushed red pepper in a bowl.

  2. Place the chicken breasts in a container and pour the marinade over them. Marinate for at least 30 minutes.

  3. Option 1: BBQ the marinated chicken or use a grill cast iron. Cook for 5 minutes on each side using Chosen Foods avocado oil.

  4. Option 2: Cook the marinated chicken in a grill cast iron using Chosen Foods avocado oil for 5 minutes on each side.

  5. For the salsa, combine diced pineapple, diced onion, diced jalapeño, chopped cilantro, and diced avocado. Optionally, add cherry tomatoes for extra color.

  6. Assemble bowls with the cooked chicken, pineapple salsa, and rice or cauli rice. You can also add a side of spinach or greens.
