Polish Vegetable Salad

Ingredients

  • 3 medium potatoes
  • 3 large carrots
  • 2 thinner parsley roots
  • 200 g celery root
  • 1 large pickled cucumber
  • 1 tiny onion
  • 1 can of yellow corn
  • 1 small apple
  • 1can of canned peas
  • 4 tablespoons of good vegan mayonnaise
  • 4 tablespoons of unsweetened yogurt
  • 2 tablespoons of mustard
  • salt & pepper

Preparation

  1. Thoroughly wash the carrots, parsley roots and a piece of celery & potatoes

  2. Don’t peel them off

  3. Place the vegetables in a pot with water and cook covered until tender

  4. Be careful & don’t cook them longer than 30min on a medium fire -they need to stay firm

  5. After cooking remove the vegetables from the water and set aside for 15 min

  6. Peel them and chop finely , peel & chop the apples & onion , dry the peas & yellow corn - transfer everything & mix properly in a large bowl
