Quick and Cheesy Marinated Tofu

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar (ACV)
  • Juice of 1 lemon
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon granulated garlic
  • Cracked black pepper
  • Himalayan salt
  • 2 tablespoons nutritional yeast
  • Zest of a lemon
  • Oregano
  • Basil
  • Sliced onion (optional)
  • 200-250 grams tofu, cubed

Preparation

  1. In a mixing bowl, whisk together the extra virgin olive oil, apple cider vinegar, lemon juice, honey or maple syrup, granulated garlic, cracked black pepper, Himalayan salt, nutritional yeast, lemon zest, oregano, basil, and sliced onion (if using).

  2. Add the cubed tofu to the mixture and gently toss to coat the tofu with the marinade.

  3. Once the tofu is well coated, transfer everything to a jar.

  4. Refrigerate the marinated tofu for a period of time to allow the flavors to meld and develop.

  5. When ready to serve, toss the marinated tofu into your favorite salad.
