Indian Flavored Salad Jar with Vegetables
Ingredients
- Handful spinach
- 1 cup basmati rice
- Cranberries
- Cashewnuts
- Red pepper
- Green pepper
- Peas
- Mango chopped
- Green beans
- Carrots
- Yellow bell pepper
- Garlic flakes 4 to 5
- Coconut oil 3 to 4 tsp
- Curry leaves few
- Turmeric powder 2 pinches
- Onions chopped
- 1/2 tsp mustard seeds
- 1/2 tsp Himalayan pink salt
- Grapefruit for garnish
Preparation
Chop all vegetables, garlic, and onions into small cubes and set aside.
Heat oil in a thick-bottomed pan. Add mustard seeds and let them pop.
Add curry leaves, chopped garlic, half of the vegetables, and salt. Stir-fry for at least 5 minutes until well mixed.
For the rice, stir-fry basmati rice with turmeric powder and curry leaves to achieve a yellow color and flavor.
Allow the rice and vegetables to cool down before layering.
Layer the ingredients in the jar from bottom to top starting with spinach, followed by rice, cranberries, cashewnuts, peppers, peas, mango, beans, carrots, and bell pepper.
Optionally, add cranberries, cashewnuts, and onions while cooking the rice or layer them separately for variety.
Garnish with onions and grapefruit; squeeze grapefruit when eating to add tanginess.
The salad can be enjoyed cold or hot, as it is flavorful and prepared in the jar itself.
