Tasty Vegan Chick'n Caesar Salad Bowl

Ingredients

  • Bite-size soy strips
  • Sun dried tomatoes
  • Fresh garlic
  • Olive oil
  • Crunchy leaves
  • Greens
  • Avocado slices
  • Tomatoes
  • Cucumber
  • Vegan mayo
  • Light soy sauce
  • Fresh lemon juice
  • Salt
  • Black pepper
  • Garlic puree
  • Dijon mustard
  • Sriracha (optional)

Preparation

  1. Layer the salad with crunchy leaves, greens, avocado slices, tomatoes, cucumber, and other vegetables of choice.

  2. Fry the bite-size soy strips with sun dried tomatoes, fresh garlic, and a little olive oil until cooked.

  3. For the dressing, whisk together 3 tbsp vegan mayo, 1 tsp light soy sauce, 2 tbsp fresh lemon juice, a small pinch of salt, generous grinding of black pepper, 1 tsp garlic puree, and 1/4 tsp Dijon mustard.

  4. Drizzle the dressing over the salad and add a small squeeze of Sriracha if desired for heat.

  5. Serve immediately; this makes enough for 2 servings or 1 indulgent portion.
