Vegan Quinoa, Watermelon & Feta Summer Salad
Ingredients
- 250g watermelon
- 1 x 250g pouch of merchant gourmet red & white quinoa
- 175g vegan feta
- 200g cucumber
- 2 sprigs of mint
- 3 tbsp olive oil
- juice of 1 lime
- sea salt to season
Preparation
Chop up the watermelon, feta and cucumber into small bite-sized cubes and toss in a large bowl with the quinoa, until well-combined and distributed
Cover the salad with the olive oil, juice of a lime and sea salt
To finish, chop up the mint leaves and add, stirring well before serving
