Chickpea Salad Sandwich
Ingredients
- 2 cups of chickpeas, cooked and rinsed
- 1 small (red) onion
- 2 celery stalks
- 2 large pickle + 1 tbsp pickle juice
- 1 tbsp Dijon mustard
- 1/4 cup vegan mayo or mashed avocado
- Salt and pepper to taste
Preparation
Finely dice onion, celery and pickles. Put all ingredients into a food processor and pulse until salad reaches your desired consistency or simply mash chickpeas with a fork and mix in remaining ingredients
Season with salt and pepper to taste and enjoy
