Chickpea Salad Sandwich

Ingredients

  • 2 cups of chickpeas, cooked and rinsed
  • 1 small (red) onion
  • 2 celery stalks
  • 2 large pickle + 1 tbsp pickle juice
  • 1 tbsp Dijon mustard
  • 1/4 cup vegan mayo or mashed avocado
  • Salt and pepper to taste

Preparation

  1. Finely dice onion, celery and pickles. Put all ingredients into a food processor and pulse until salad reaches your desired consistency or simply mash chickpeas with a fork and mix in remaining ingredients

  2. Season with salt and pepper to taste and enjoy
