Vegan Chickpea Salad Sandwich with Fresh Vegetables

Ingredients

  • 2 cups chickpeas, cooked and rinsed
  • 1 small red onion
  • 2 celery stalks
  • 2 large pickles
  • 1 tablespoon pickle juice
  • 1 tablespoon Dijon mustard
  • 1/4 cup vegan mayo or mashed avocado
  • Salt and pepper to taste
  • Sourdough bread
  • Romaine lettuce
  • Heirloom tomato
  • Cucumber
  • Arugula

Preparation

  1. Finely dice onion, celery and pickles.

  2. Put all ingredients into a food processor and pulse until salad reaches your desired consistency or simply mash chickpeas with a fork and mix in remaining ingredients.

  3. Season with salt and pepper to taste and enjoy.
