Vegan Chickpea Salad Sandwich with Fresh Vegetables
Ingredients
- 2 cups chickpeas, cooked and rinsed
- 1 small red onion
- 2 celery stalks
- 2 large pickles
- 1 tablespoon pickle juice
- 1 tablespoon Dijon mustard
- 1/4 cup vegan mayo or mashed avocado
- Salt and pepper to taste
- Sourdough bread
- Romaine lettuce
- Heirloom tomato
- Cucumber
- Arugula
Preparation
Finely dice onion, celery and pickles.
Put all ingredients into a food processor and pulse until salad reaches your desired consistency or simply mash chickpeas with a fork and mix in remaining ingredients.
Season with salt and pepper to taste and enjoy.
