Easy Vegan Tofu Egg Mayo Sandwich

Ingredients

  • some tofu
  • 1 tbsp olive oil
  • 1 tsp turmeric
  • sprinkle of dried fennel
  • sprinkle of dried parsley
  • salt and pepper
  • 1 tbsp vegan mayo
  • bread

Preparation

  1. Drain and dry some tofu with a paper towel to squeeze any water out.

  2. Break it into small pieces into a pan and fry the tofu with a tbsp of olive oil for a few minutes.

  3. Then add a tsp of turmeric and a sprinkle of dried fennel and dried parsley - add salt and pepper and cook for a few more minutes.

  4. Add the tofu to a bowl and mix with a tbsp of vegan mayo.

  5. Put it in some bread! Done.
