Easy Vegan Tofu Egg Mayo Sandwich
Ingredients
- some tofu
- 1 tbsp olive oil
- 1 tsp turmeric
- sprinkle of dried fennel
- sprinkle of dried parsley
- salt and pepper
- 1 tbsp vegan mayo
- bread
Preparation
Drain and dry some tofu with a paper towel to squeeze any water out.
Break it into small pieces into a pan and fry the tofu with a tbsp of olive oil for a few minutes.
Then add a tsp of turmeric and a sprinkle of dried fennel and dried parsley - add salt and pepper and cook for a few more minutes.
Add the tofu to a bowl and mix with a tbsp of vegan mayo.
Put it in some bread! Done.
