Spicy Chickpea and Mashed Avocado Breakfast
Ingredients
Spicy chickpea
- 1 can chickpeas, drained and rinsed
- 1 small garlic clove, crushed
- 1/2 tsp chilli powder
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1 tsp paprika
- Juice of 1 lemon
- Salt and pepper
Mashed avocado
- 1 ripe avocado
- Juice of 1/2 lemon
- Pinch of salt
- Optional: chilli flakes
- Sliced bread of choice
Preparation
Heat 1 tsp of oil in a frying pan over medium heat, add garlic and chickpeas, and cook for 2 minutes. Then add spices, lemon juice, salt, and pepper, and cook for 2-3 minutes.
Mash the avocado in a small dish, add lemon juice and a pinch of salt, and optionally add chilli flakes.
Spread the avocado mixture over toasted bread, then top with the chickpeas mixture and enjoy.
