Spicy Chickpea and Mashed Avocado Breakfast

Ingredients

Spicy chickpea

  • 1 can chickpeas, drained and rinsed
  • 1 small garlic clove, crushed
  • 1/2 tsp chilli powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1 tsp paprika
  • Juice of 1 lemon
  • Salt and pepper

Mashed avocado

  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Pinch of salt
  • Optional: chilli flakes
  • Sliced bread of choice

Preparation

  1. Heat 1 tsp of oil in a frying pan over medium heat, add garlic and chickpeas, and cook for 2 minutes. Then add spices, lemon juice, salt, and pepper, and cook for 2-3 minutes.

  2. Mash the avocado in a small dish, add lemon juice and a pinch of salt, and optionally add chilli flakes.

  3. Spread the avocado mixture over toasted bread, then top with the chickpeas mixture and enjoy.
