Toasty Mushroom and Black Bean Tostadas


  • 4 pitas
  • 1 tsp of olive oil
  • 1 clove of minced garlic
  • 2 cups of chopped portobello mushroom
  • 1 tsp of cumin
  • 1/2 tsp of pink himalayan salt
  • 1/2 tsp of paprika
  • 1/4 tsp of black pepper
  • 1/4 tsp of oregano
  • 1/4 tsp of crushed red pepper flakes
  • 1 cup of black beans
  • 1/2 cup of chopped vine ripe tomatoes
  • 1/4 cup of sliced red cabbage
  • 1/4 cup of chopped green pepper
  • 1 avocado sliced
  • limes


  1. Preheat oven to 350°, place pitas on a baking sheet and season with a sprinkle of salt and fresh squeezed lime juice

  2. Place in oven for ten minutes, while pitas are toasting heat a cast iron pan on medium heat add olive oil and garlic to pan

  3. Once garlic is fragrant add mushroom and seasonings stir for a few minutes and add in black beans

  4. Remove pitas from oven and add mushrooms and beans on top followed by tomatoes, cabbage, peppers, and avocado

  5. Garnish with fresh squeezed lime juice, crushed red pepper flakes, and enjoy????⛄ #threebunnies
