“Tuna” Mayo

Ingredients

  • 1 can chickpeas * 3 tablespoons vegan mayonnaise * 1 tablespoon red onion finely chopped
  • * 10 capers finely chopped (optional)
  • * 2 teaspoons nutritional yeast (optional)
  • * 1/2 a lemon juice ? * 1/2 teaspoon crumbled dried nori seaweed (optional) ? * Sweetcorn * Small pinch salt and pepper

Preparation

  1. Drain and rinse the chickpeas, then coarsely mash them with a fork * Add all remaining ingredients and mix to combine

  2. Serve on bread with fresh cucumber
