Ur Stuffed Avocados with Quinoa

Ingredients

  • avocados
  • Fresh baby arugula
  • cooked quinoa
  • sliced purple cabbage
  • sliced grape tomatoes
  • and micro greens

Preparation

  1. All you'll need is some hass avocados sliced in halves with seeds removed

  2. Fresh baby arugula, cooked quinoa, sliced purple cabbage, sliced grape tomatoes, and micro greens

  3. Just line arugula into the avocado pit

  4. Use a scooper to scoop quinoa in and top with remaining ingredients garnish with a fresh squeezed lime juice and enjoy
