Vegan Sandwich with Spiced Tempeh and Guacamole
Ingredients
- 150-200g tempeh
- 1 teaspoon turmeric
- 3 tablespoons vegan BBQ sauce
- 1 teaspoon chili powder
- salt to taste
- 1 ripe avocado
- lime juice
- 1 garlic clove
- red bell pepper
- salt and pepper to taste
- kidney beans
- spinach leaves
- tomato
- pickles
Preparation
Mix 150-200g tempeh with 1 teaspoon turmeric, 3 tablespoons vegan BBQ sauce, 1 teaspoon chili powder, and salt to taste.
Bake the tempeh mixture until crispy.
Chop red bell pepper into small squares.
Mash 1 ripe avocado with lime juice, 1 garlic clove, chopped red bell pepper, salt, and pepper to taste to make guacamole.
Mash some kidney beans.
Spread the guacamole on one half of the bread.
Spread the mashed kidney beans on the other half of the bread.
Place spinach leaves on the guacamole-covered bread half.
Add the baked tempeh on top.
Add tomato slices and pickles on top.
