Alkaline Vegan Scallops from King Trumpet Mushrooms
Ingredients
- king trumpet mushrooms
- warm water
- 1 teaspoon salt
- 1 teaspoon seaweed powder
- 1 teaspoon sour orange juice
- grapeseed oil
- sour orange or lemon
- crushed tarragon
- dill
- Alkaline Old Bay
- dulse or kelp granules
Preparation
Clean the king trumpet mushrooms well and cut the stems into 1-inch pieces to resemble scallops.
Soak the scallops in a brine of warm water, 1 teaspoon salt, 1 teaspoon seaweed powder, and 1 teaspoon sour orange juice for at least 30 minutes.
Baste the scallops with a mixture of grapeseed oil, sour orange or lemon, crushed tarragon, dill, Alkaline Old Bay, and dulse or kelp granules.
Bake in a 400-degree oven for 5 minutes on each side.
Serve with pasta, salad, or flatbread pizza.
