Alkaline Vegan Scallops from King Trumpet Mushrooms

Ingredients

  • king trumpet mushrooms
  • warm water
  • 1 teaspoon salt
  • 1 teaspoon seaweed powder
  • 1 teaspoon sour orange juice
  • grapeseed oil
  • sour orange or lemon
  • crushed tarragon
  • dill
  • Alkaline Old Bay
  • dulse or kelp granules

Preparation

  1. Clean the king trumpet mushrooms well and cut the stems into 1-inch pieces to resemble scallops.

  2. Soak the scallops in a brine of warm water, 1 teaspoon salt, 1 teaspoon seaweed powder, and 1 teaspoon sour orange juice for at least 30 minutes.

  3. Baste the scallops with a mixture of grapeseed oil, sour orange or lemon, crushed tarragon, dill, Alkaline Old Bay, and dulse or kelp granules.

  4. Bake in a 400-degree oven for 5 minutes on each side.

  5. Serve with pasta, salad, or flatbread pizza.
