Cold Noodle Salad with Tahini Chili Sauce
Ingredients
- cucumbers
- rosemary ham
- corn
- thin spaghetti
Sauce mixture
- 1/2 cup oil
- 8 cloves thinly sliced garlic
- 2 thinly sliced scallions
- 1/2 tablespoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon curry powder
- 3/4 tablespoon white sesame seeds
- 2 tablespoons Sichuan chilli pepper paste
- 1/4 cup plus 1 tablespoon Japanese sesame paste
- 1/4 cup soy sauce
- 1 tablespoon smooth peanut butter
- 3/4 tablespoon light brown sugar
- 3/4 teaspoon balsamic vinegar
Preparation
Cut up cucumbers, rosemary ham, and corn.
Prepare thin spaghetti by cooking it according to package instructions as a substitute for soba noodles.
To make the sauce, heat 1/2 cup oil and add 8 cloves of thinly sliced garlic, 2 thinly sliced scallions, 1/2 tablespoon ground coriander, 1/2 teaspoon ground cumin, 1/4 teaspoon curry powder, 3/4 tablespoon white sesame seeds, and 2 tablespoons Sichuan chilli pepper paste.
Let the spices bloom in the oil, then remove from heat.
Add 1/4 cup plus 1 tablespoon Japanese sesame paste, 1/4 cup soy sauce, 1 tablespoon smooth peanut butter, 3/4 tablespoon light brown sugar, and 3/4 teaspoon balsamic vinegar.
Mix everything well for the sauce.
Serve the sauce over the prepared noodles and vegetables when ready to eat.
