Crunchy Potstickers with Sweet and Spicy Sauce
Ingredients
- Sesame oil
- 4 garlic cloves
- 2 thumb-sized pieces of ginger
- 4 handfuls of shiitake mushrooms
- 1/2 block of smoked tofu
- 3 tablespoons soy sauce
- 2 tablespoons maple syrup
- 2 teaspoons chili flakes
- 2.5 spring onions
- Handful of fresh cilantro
- 50g thin rice noodles
- 300g flour
- 1/2 teaspoon salt
- 150ml hot water
- Sesame oil for cooking
- Optional: sesame seeds
For the Sauce
- 5 tablespoons soy sauce
- 3 tablespoons maple syrup
- 2 tablespoons rice wine vinegar
- 1/2 tablespoon chili paste
- 1 tablespoon sesame oil
- 1 teaspoon chili oil
- 1 teaspoon sesame seeds
- The green part of 1 spring onion
Preparation
Mix flour and salt in a bowl, then add hot water.
Knead the mixture together for five minutes.
Form the dough into a ball and refrigerate for half an hour.
Chop the ginger and garlic into tiny pieces.
Chop the shiitake mushrooms into very small pieces.
Dry the tofu and chop it into tiny pieces.
Heat up oil in a pan and add the ginger and garlic.
Add mushrooms and sauté for at least 5 minutes.
Chop the spring onions.
Add sesame seeds, maple syrup, chili flakes, and spring onions to the pan.
Cook for another three minutes.
In another pan, fry tofu in oil, then deglaze with soy sauce.
Chop the cilantro.
Mix the tofu and veggies, then add cilantro and set aside to cool down.
Cook the thin rice noodles according to package instructions.
Add the noodles to the veggie mixture and combine well.
Take the dough from the fridge and sprinkle flour on a working surface.
Roll out the dough until it's roughly 2mm thick.
Use a glass to cut out circles from the dough.
When the filling has cooled down, fill each wrapper with one tablespoon of filling.
Fold over and close the wrappers, sealing the edges.
Optional: Dip the bottom into oil and then into sesame seeds for extra crunch.
Heat up oil in a large pan and add the potstickers, cooking for about 3 minutes until golden.
Add 1/4 cup of water and steam for another 2 minutes.
Mix all sauce ingredients together.
Serve the potstickers with the sauce and a side salad.
