Flavorful Harissa Hummus Made with Chickpeas
Ingredients
- 1/4 cup olive oil
- 1 shallot
- sea salt
- 2 cloves garlic
- 2-3 tsp harissa spice blend
- 1 tsp cumin
- 1 tsp honey
- 2-2.5 cups cooked chickpeas
- 1/4 cup tahini
- 1/3 cup lemon juice
- 1/3 cup plus water
Preparation
Heat 1/4 cup olive oil in a small fry pan over medium heat.
Add a large shallot, thinly sliced, and a big pinch of salt. Sauté until shallots are softened and starting to brown.
Add 2 cloves roughly chopped garlic, 2-3 teaspoons harissa powder, 1 teaspoon cumin and 1 teaspoon honey. Cook for 1-2 minutes, then remove from heat.
In a blender or food processor, purée chickpeas, tahini, lemon juice, 1/3 cup water, 1/2 teaspoon salt and the shallot/oil/spice mixture, using a spatula to get all contents from the pan.
Blend all ingredients until smooth, adding water or olive oil to achieve desired consistency.
Season with salt to taste.
