Homemade Fish Burgers

Ingredients

  • 350g skinless cod fillet
  • 200g skinless mackerel fillet
  • 100g raw prawns
  • 2 garlic cloves, crushed
  • 2 tbsp capers, chopped
  • 1 tbsp chopped parsley
  • 1 tbsp chopped dill
  • 1 tsp english mustard powder
  • salt and pepper, if required

Preparation

  1. Roughly chop the fish and prawns then gently squeeze between some sheets of kitchen roll to remove any excess moisture. Add to a blender along with the other ingredients, then pulse several times to form a rough mixture

  2. Shape into 4 large burgers, cover and chill for at least 1 hour before cooking to help firm the mixture

  3. When ready to cook, heat a non stick frying pan on a medium heat with a drizzle of oil. Fry the burgers for 5-6 mins on each side until browned and fully cooked through

  4. Serve with burger buns, lettuce, tomato and a homemade relish or ketchup
