Instant Pot Blackened Cod Risotto Delight
Ingredients
- 1 cup risotto
- 2 cups broth
- 4 tbsp butter or vegan butter (divided)
- 1/3 diced onion
- 3 garlic cloves, minced
- 1 cup frozen peas
- 1/4 cup Parmesan cheese (optional)
- Sprinkle of salt, pepper & chili flakes
- 2 pieces of cod
- Seasoning (smoked paprika, onion powder, garlic powder, basil, oregano, thyme, cayenne, salt & pepper)
Preparation
Set your Instant Pot to sauté mode and add 2 tbsp of vegan butter.
Add diced onion and minced garlic, sauté for 3 minutes while stirring.
Add risotto and broth.
Cancel the sauté mode and pressure cook for 6 minutes.
Perform a quick release, then stir in the remaining butter, peas, and optionally the cheese.
For the cod, pat the fillets dry, rub with oil and the seasoning blend.
Cook the cod fillets in avocado oil on a hot pan for 3 minutes per side.
Assemble the risotto and blackened cod.
