Veganized Tuna Salad Sammy

Ingredients

  • 2/3 cup garbanzo beans (aka chickpeas)
  • 1/3 avocado
  • 1-2 tablespoons stone ground mustard
  • 1/2 lemon or 1-2 tablespoons lemon juice
  • Seasonings to taste: lemon pepper, paprika, and garlic salt

Preparation

  1. Add all the ingredients to a bowl and mash together with a fork

  2. Serve on sprouted rye bread with roasted broccoli and carrot sticks
